Moderate snacks

Quick, easy, tasty and preferably healthy - that's how we like our snacks. These two recipes from Kristina Andersson's Eat clean - the cookbook manage to tick all the boxes

Recipe: Blueberry squares

You will need:

(12-15 pieces)

  • 3 dl cashew nuts
  • 2 dl peanut butter
  • 1 dl dried dates (soaked)
  • 1 dl blueberries
  • 1/2 dl chia seeds
  • chopped cashew nuts for garnish

Proceed as follows:

1. Mix all the ingredients.

2. Roll out the dough on a cutting board. Sprinkle with the chopped cashews.

3. Leave in the fridge for a while to harden a little. Cut into squares.

Recipe: Omelette muffins

You need:

  • Leftover ground beef, salmon, spinach, tomato, cheese, grated vegetables, potato rice, quinoa, etc
  • 1/2- 1 egg per serving
  • salt and pepper

Do this:

1. Place mixed leftovers in muffin tins. Whisk together eggs, salt and pepper and pour over the egg mixture.

2. Bake at 175 degrees for 10-20 minutes or until the muffins are colored.
